Chili pork in peanut sauce

Ingredients for 4 servings:

  • 500 g minced pork
  • 2 tbsp soy sauce, light
  • 1 tbsp dry sherry
  • 350 g Chinese egg noodles
  • 2 tsp sesame oil
  • 2 tbsp oil
  • 2 garlic cloves, crushed
  • 2 tsp ginger, grated
  • 2 red chilies, cut into rings
  • 50 g peanuts, unsalted
  • 6 tbsp peanut butter
  • 4 tbsp soy sauce, dark
  • 1 dashes chili oil
  • 300 ml meat broth
  • 1 pepper, red, cut into strips

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Combine the meat, light soy sauce, and sherry and marinate for 30 minutes. Meanwhile, cook the noodles, drain, rinse, and toss in sesame oil. Heat the vegetable oil in a wok or pan and sauté the bell peppers, chili, ginger, and garlic. Add the marinated minced meat and sauté for a few minutes. Add the peanuts, peanut butter, dark soy sauce, chili oil, and meat broth and simmer for two to three minutes. Add the noodles, toss in the mixture, and serve.
