Ingredients for 6 servings:
- 500 g pork fillet(s) or other lean pork
- 400 g broccoli
- 1 tbsp black beans, fermented
- 1 tbsp soy sauce, dark
- 2 tsp sauce (chili bean sauce)
- 1 tsp sugar
- 1 tsp cornstarch
- 1 tbsp peanut oil
- 1 clove(s) garlic, crushed
- 1 red chili pepper(s), cut into fine rings
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
Trim the fillet if necessary and cut into wafer-thin slices (this is easier if you let it freeze slightly). Blanch the broccoli florets in boiling water for 1 minute. Drain and set aside. Rinse the beans under cold running water, drain, and chop. Mix the soy sauce, chili bean sauce, sugar, and cornstarch with 4 tablespoons of cold water. Heat the wok and add the oil. Swirl the wok to distribute the oil. Add the meat and stir-fry over high heat until browned. Remove and set aside. Add the garlic and chopped black beans and stir-fry for a few seconds. Stir in the sauce mix and cook until boiling and thickened. Return the meat and broccoli to the wok and heat through. Serve garnished with chili rings.
