Chinese cabbage salad with blood oranges and walnuts

Ingredients for 2 servings:

  • 1 small Chinese cabbage
  • 2 onions, red
  • 20 g butter
  • 2 tsp powdered sugar
  • 2 blood oranges
  • 1 handful of walnut kernels, chopped
  • 3 tbsp extra virgin olive oil
  • e.g. salt and pepper
  • 2 tsp honey, liquid

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Winter Salad 2021

Juice one blood orange and cut the other into segments. Cut the Chinese cabbage into strips for two servings and place in a bowl. Peel the onions and slice them into half rings. Heat butter in a pan and sauté the onion rings. Sprinkle with powdered sugar and let the onions caramelize. Mix the cabbage with the onions. Make a dressing from the orange juice, oil, salt, pepper, and honey and toss it over the salad. Arrange the salad on two plates and arrange the orange segments and chopped walnuts on top.
