Chinese cabbage salad with kumquats in yogurt dressing

Ingredients for 2 servings:

  • ½ Chinese cabbage, rather small or medium-sized
  • 10 kumquats
  • 6 tbsp yogurt
  • 3 tbsp apple cider vinegar or apple balsamic vinegar, mild
  • 1 tbsp walnut oil
  • 2 tbsp milk, optional, to lengthen
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes

Wash and finely chop the Chinese cabbage. Wash and chop the kumquats. Mix the dressing and season to taste. Place the Chinese cabbage and kumquats in a bowl and pour the dressing over them. Mix and let stand for a while.
