Zucchini and cucumber vegetables in a garlicky tomato cream sauce

Ingredients for 3 servings:

  • 300 g zucchini
  • 300 g cucumber(s)
  • ½ bunch of spring onions
  • 1 large onion(s)
  • 5 garlic cloves
  • 1 tbsp oil
  • 150 ml water or broth
  • 4 tbsp tomato paste, approx.
  • 150 ml sour cream
  • 1 tbsp lovage
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash and dice the zucchini and cucumber. Wash and slice the spring onions. Peel and dice the onion and garlic. Sauté the onions and spring onions in oil. Add the zucchini, cucumber, and water or broth and simmer for 10 minutes, or until tender. Stir in the tomato paste, then the sour cream and lovage. Heat everything through and season.
