Chinese cabbage with fruity sauce, nectarines and almonds

Ingredients for 2 servings:

  • ½ Chinese cabbage
  • 1 nectarine(s)
  • 2 tbsp almond slivers
  • 2 tbsp Balsamic vinegar, dark (currant balsamic vinegar)
  • 2 tbsp yogurt 3.5%, set
  • 1 tbsp milk
  • 1 tbsp chives, fresh, chopped
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and cut the Chinese cabbage into strips. Wash, halve, and pit the nectarine, then slice or dice it. Roast the almonds in a dry pan. Mix together a dressing from the blackcurrant balsamic vinegar, yogurt, milk, chives, salt, and pepper and season to taste. Arrange the Chinese cabbage on plates or in small bowls. Spoon the nectarine and dressing over the cabbage, then sprinkle the almonds over the top.
