Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 egg(s)
  • 1 tbsp oil
  • 2 chili peppers
  • 1 onion(s)
  • 1 clove(s) garlic (optional)
  • 4 tbsp soy sauce
  • 2 tbsp vinegar
  • 50 g glass noodles
  • salt and pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the cucumber, slice into thin strips, toss with a little salt, and let stand for 60 minutes. In the meantime, boil the glass noodles in water for 4-5 minutes, drain, and set aside. Break the egg and cook two thin pancakes, cutting them into small strips. Finely chop the onion and garlic. Heat oil in a pan, fry the chilies (do not blacken them), and remove from the pan. Pour the hot oil over the onions and garlic. Add soy sauce, sugar, salt, and pepper. Squeeze the cucumbers and add them to the oil and spice mixture along with the chopped glass noodles and pancake strips. Stir, season to taste, and you’re done!
