Ingredients for 1 servings:
- 1.6 kg flour
- 1 ½ kg honey
- 550 g sugar
- 175 g candied orange peel
- 175 g candied lemon peel
- 60 g cinnamon
- 2 pinches of clove(s), ground
- ½ tsp nutmeg, finely grated
- 1 lemon(s), untreated, peel and juice
- 3 cl cherry brandy
- 20 g salt (dried salt)
- 2 tsp potash
- 750 g almond(s), coarsely chopped
- 300 ml water
- 400 g sugar

Spread the flour in a ring on the table, leaving the center free for other ingredients. Sprinkle the spices, candied orange peel, and candied lemon peel over the flour. Arrange half of the almonds around the inner edge of the ring. Sprinkle the raising salt, potash, and kirsch on top of the flour to prevent scalding. Place the honey and sugar in a saucepan and heat thoroughly, but do not allow to boil. Add the other half of the almonds to the hot honey. Place this mixture in the center of the ring and, using a spatula and a ladle, knead it into a firm dough. Be careful not to mix the raising salt with the hot honey mixture. The rest of the preparation is the same as for other treats. Roll out the dough, not too thinly, on a baking sheet (this amount is enough for about 4 baking sheets). For the glaze, simmer the sugar and water for a long time—at least 2-3 hours. The glaze should turn white after spreading it on the baked, still-warm treats. Bake: Approximately 12 minutes at 170°C fan-assisted oven (this depends on the oven, of course). Cut into approximately 6 x 4 cm rectangles.
