Ingredients for 2 servings:
- 4 medium-sized potatoes, floury
- 1 liter of oil for frying
- 2 chili peppers
- 2 cloves garlic
- cornstarch
- 1 spring onion(s)
- some salt
- ½ tsp sugar

Preheat oil (e.g. peanut or sunflower oil) in a medium-sized pot or wok. Peel the potatoes, cut them into chip-sized pieces, and rinse them lightly in a sieve with water. Place the potato pieces in a large bowl, gradually sprinkle with cornstarch and shake until all the pieces are evenly coated with white liquid. Cut the garlic, chili, and spring onions into small pieces or slices. Check that the oil in the pot is hot, and then carefully add the fries – fry in several batches if there is not enough space in the pot. Stir the fries occasionally to prevent them from sticking together. When the fries are already golden brown, remove them and drain/store them temporarily in a sieve. Fry the chilies and garlic in a pan with oil. Continue frying the fries in the pot until they are really dark and crispy. Skim the fries and return them to the pan. Stir everything in the pan a few times to ensure the fries are nicely coated in the oil. Add a little salt and 1/2 teaspoon of sugar and stir. Serve sprinkled with spring onions.
