Ingredients for 2 servings:

  • 3 large carrots
  • 1 bell pepper(s), yellow
  • 1 can of bamboo shoots
  • 10 ml oil (sesame oil)
  • 2 tsp peanut butter
  • Spice mix (Chinese spice)
  • 1 cup(s) water

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the carrots and cut into approximately 1 cm thick slices. Trim and dice the bell pepper (approx. 2 x 2 cm). Sauté the carrots in sesame oil and add the bell pepper pieces. Drain the bamboo shoots and add them to the vegetables. Add water and stir in the peanut butter. Season with Chinese spices to taste. Simmer everything for about 10 minutes. The vegetables are delicious with sticky rice and eaten with chopsticks.
