Swedish pancakes

Ingredients for 4 servings:

  • 3 eggs
  • 600 ml milk
  • 300 ml flour
  • ½ tsp salt
  • 3 tbsp butter, melted
  • Clarified butter for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Pippi Longstocking’s pancakes

Combine the flour with milk, melted butter, eggs, and salt. Let the batter stand for half an hour. Then, melt a little clarified butter in a small pan and add a spoonful of batter, stirring the pan to spread it out. Cook the pancakes until light brown on both sides and keep warm until all are cooked. Serve with fresh fruit, sugar and cinnamon, fruit puree, or jam.
