Chive and mustard seed sauce

Ingredients for 4 servings:

  • 2 tsp mustard seeds
  • ¼ liter whipped cream
  • 40 g butter, well chilled
  • 2 tsp lime juice
  • Salt and pepper, freshly ground white
  • 1 bunch of chives, finely chopped

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Bring the cream and mustard seeds to a boil. Simmer in an uncovered saucepan over medium heat until creamy. Remove from the heat and let cool slightly. Whisk in the well-chilled butter in small pieces. Season the sauce with lime juice, salt, and pepper. Just before serving, stir in the chives. This sauce pairs well with scampi, steak, soft-boiled or poached eggs, poached fish, or boiled potatoes.
