Ingredients for 1 servings:
- 200 g spelt flour
- 2 tsp baking powder
- ½ tsp cinnamon
- 3 tbsp cocoa
- 1 large egg(s)
- 175 g sugar
- 100 ml oil
- 125 g milk
- 3 large bananas
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Whisk together the flour, baking powder, cinnamon, and cocoa powder. In a second bowl, whisk together the egg, sugar, oil, and milk. Roughly mash the bananas in a soup bowl or small bowl, preferably with a fork. Add the bananas to the egg and sugar mixture and mix gently. Add the flour mixture and fold in gently. Stir only as much as necessary. Prepare a muffin tin with muffin cups. Fill each cup 3/4 full; the muffins will still rise. Bake the muffins at 160°C (top/bottom heat) for 25-30 minutes. This quantity makes 16 muffins.
