Ingredients for 1 servings:

  • 200 g low-fat curd cheese
  • 100 g whole grain oat flakes
  • 4 m.-large egg whites
  • 2 m.-sized banana(s)
  • 1 tsp baking powder
  • 40 g cocoa

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

makes 12 muffins

Preheat the oven to 200°C fan/convection oven. Combine all ingredients in a bowl and mix thoroughly with a mixer until the batter is smooth. Divide the batter into 12 portions and fill muffin tins. Use either a 12-hole metal or silicone muffin tin, or paper muffin cases. Bake at 200°C on the middle rack for about 20 minutes, and the muffins should be done. Allow to cool slightly before serving.
