Ingredients for 1 servings:
- 150 g butter or margarine
- 2 eggs
- 75 g sugar
- 200 ml buttermilk
- 50 ml milk
- 300 g flour
- 1 bag of baking powder
- 2 tbsp cocoa powder
- 12 chocolate bars
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Makes 12 chocolate muffins.
Using a hand mixer, cream together room-temperature butter or margarine with eggs and sugar until fluffy. Gradually add the buttermilk and milk, stirring continuously. Sift together the flour, baking powder, and cocoa powder, then gradually add to the mixture and stir. Preheat the oven to 180°C (350°F) or 160°C (320°F) for a fan/convection oven. Place 12 muffin cups on a baking sheet or in a special muffin tin. Spoon 1 tablespoon of batter into each cup, then place a sliced chocolate bar on top. Cover with another tablespoon of batter. Bake for 18-20 minutes.
