Ingredients for 4 servings:
- 3 egg whites
- 250 g sugar, fine-grained (baking sugar)
- 1 packet of vanilla sugar
- 125 g dark chocolate, finely grated
- 250 g almond(s), peeled, chopped

Beat the egg whites until stiff, then add the sugar a tablespoon at a time, then beat in the vanilla sugar. Mix the grated chocolate with the chopped almonds and very carefully fold into the beaten egg whites (do not stir). Place small mounds, leaving some space between them, on a baking sheet lined with baking paper and let dry in a preheated oven at 130-150°C (top/bottom heat) for about 25 minutes.
