Chocolate Carrot Feta Bread Pudding

Ingredients for 1 servings:

  • 200 g dark chocolate, at least 70% cocoa, chopped
  • 2 large carrots, grated
  • 150 g feta cheese, crumbled
  • 4 m.-sized eggs
  • 400 ml oat milk (oat drink) or milk
  • 100 g sugar
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • Butter or oil for the mold
  • 500 g bread(s), stale, diced

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Preheat the oven to 180°C. Generously grease a baking or casserole dish with butter or oil. In a large bowl, whisk together the milk, eggs, sugar, vanilla extract, and salt until well blended. Add the grated carrots, crumbled feta, and chopped chocolate and mix well. Add the bread cubes and let them soak in the mixture for about 10 minutes to absorb the liquid. Pour the mixture into the prepared baking dish and spread evenly. Bake the pudding in the preheated oven for about 40-45 minutes, until firm and golden brown. Allow the pudding to cool slightly before serving. It can be enjoyed hot or cold.
