Chocolate cherry muffins à la Didi

Ingredients for 1 servings:

  • 100 g butter
  • 100 g sugar
  • 2 m.-sized eggs
  • ½ pack of lemon flavor (lemon peel flavor)
  • ½ packet of vanilla sugar
  • ½ bottle of bitter almond flavor
  • ½ pack of baking powder
  • 200 g flour
  • 20 g chocolate shavings
  • 25 g baking cocoa
  • 50 ml milk
  • ½ jar sour cherries, approx. 150 g drained weight
  • 160 g white chocolate coating
  • 10 g chocolate shavings

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

for 12 muffins

Beat the eggs with the sugar and vanilla sugar until frothy. Gradually add the flour and baking powder. Then add the cocoa powder, butter, chocolate shavings, lemon zest flavoring, and bitter almond flavoring. Mix with the milk until smooth and well-blended. Carefully fold in the drained sour cherries. Line a muffin tin with 12 paper baking cups and fill with the batter. Bake the muffins in a preheated oven at 175°C (convection oven) for 25 minutes. Melt the chocolate coating over a bain-marie and spread it over the still-warm muffins. Decorate with grated chocolate.
