Chocolate-coconut cookies

Ingredients for 1 servings:

  • 150 g chocolate, dark
  • 100 g chocolate (milk chocolate)
  • 50 g butter
  • 3 eggs
  • 250 g sugar
  • 60 g cocoa powder
  • 60 g rice flour
  • 200 g desiccated coconut

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Gluten-free, makes about 40 cookies

Crumble the chocolate and melt it with the butter in a double boiler. Mix together the cocoa, rice flour, and desiccated coconut. Beat the eggs and sugar until frothy. Fold in the chocolate mix and then the dry ingredients and let the dough rest for 5-10 minutes. It should be chewy, not too runny. Drop small heaps of the dough onto a baking sheet lined with parchment paper. Bake at 180°C (350°F) for about 12 minutes. The cookies should be dry on the outside but still soft on the inside.
