Ingredients for 1 servings:

  • 200 g flour
  • 100 g sugar
  • 100 g almonds, ground
  • 100 g margarine, e.g. Alsan
  • 100 g soy yogurt (yogurt alternative)
  • 2 tbsp coffee, cold
  • 50 g chocolate, chopped or grated
  • e.g. powdered sugar for dusting or chocolate coating for coating

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 50 minutes

vegan cookies with soy yogurt

First, mix the sugar, almonds, and flour. Then, knead with the margarine, coffee, and yogurt until smooth. Carefully knead in the chocolate chips and chill the dough for 2 hours. Cut out cookies from the dough or form balls and flatten them. Place the cookies on a baking sheet lined with baking paper and bake in a preheated oven at 150 degrees Celsius (top/bottom heat) for about 20 minutes on the middle rack. Let cool, then dust with powdered sugar or cover with chocolate coating. Tip: Use flavored soy yogurt. Vanilla or almond yogurt goes well with coffee.
