Chocolate cookies with Irish cream

Ingredients for 1 servings:

  • 240 g butter
  • 300 g sugar
  • 2 eggs
  • 1 bottle of vanilla flavor
  • 8 tbsp Baileys Irish Cream or milk
  • 340 g flour
  • 50 g cocoa powder
  • 1 tsp coffee powder
  • 1 packet of baking powder
  • ¼ tsp salt
  • 100 g milk chocolate
  • 200 g white chocolate

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 10 minutes; Total time approx. 8 hours 30 minutes

Beat butter with sugar, eggs, and vanilla essence until creamy. Add Irish cream, or simply milk if desired. Sift the flour and cocoa powder with the coffee powder into the remaining ingredients. Stir in the baking powder and salt. Chop both types of chocolate and fold in. Refrigerate the dough for 4-6 hours or overnight. Preheat the oven to 180°C (top/bottom heat). Meanwhile, shape the dough into approximately 30 small balls and bake for approximately 10 minutes.
