Chocolate cookies with soft filling

Ingredients for 1 servings:

  • 180 g butter
  • 120 g sugar
  • 2 egg yolks
  • 250 g flour
  • 5 g baking powder
  • 30 g cocoa powder
  • 1 bar of chocolate (dark is best!)

Working time approx. 20 minutes; Total time approx. 20 minutes

makes about 30 cookies

Cream the butter and sugar until fluffy, beat in the egg yolks, add the flour, baking powder, and cocoa powder, and knead everything into a firm dough. Place the dough in the refrigerator for a while. Preheat oven to 190°C. Roll out the dough thinly and cut out equal numbers of circles using two different sized round cookie cutters (approx. 5 and 6 cm). Place a piece of chocolate on each of the small circles, place the larger one on top, and press down firmly. If the dough breaks a little, it’s okay. At least it will look homemade. Just be careful that no chocolate can leak out during baking. Bake the cookies for about 10 minutes. Eat warm or cooled.
