Ingredients for 6 servings:

  • 300 g milk
  • 84 g glucose powder
  • 120 g sugar
  • 100 g dark chocolate (Cailler Cremant), 46%
  • 50 g dark chocolate (Cailler Cremant), 64%
  • 50 g dark chocolate (Cailler Cremant), 64%, in pieces
  • 300 g cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Combine all ingredients, except the cream and the chopped chocolate, and heat to 75°C for 5 minutes. The chocolate should be melted. Add the cold cream to cool. The mixture is ready for the ice cream maker. Just before the mixture has thickened, add the chocolate pieces and mix well.
