Chocolate ice cream with 99% chocolate and chili

Ingredients for 8 servings:

  • 50 g chocolate (99% cocoa content)
  • 1 chili pepper(s), hot
  • 250 ml cream
  • 500 ml milk
  • 6 egg yolks
  • 150 g sugar

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Bring the chocolate to a boil along with the milk, cream, and the sliced ​​chili pepper. Meanwhile, whisk the egg yolks and sugar until frothy. Once the milk and cream mixture has boiled and the chocolate has completely dissolved, strain it through a sieve. Bring back to a boil, remove from the heat, and add the egg mixture, stirring constantly. Continue stirring (in a double boiler or directly on the stovetop) and let it thicken until it reaches a sauce-like consistency. Remove from the heat and stir until lukewarm (this works best if you use a large pot of iced water and place a round mixing bowl inside). Then let it cool further and churn the mixture into an ice cream maker.
