Ingredients for 8 servings:
- 50 g chocolate (99% cocoa content)
- 1 chili pepper(s), hot
- 250 ml cream
- 500 ml milk
- 6 egg yolks
- 150 g sugar
Instructions
Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes
Bring the chocolate to a boil along with the milk, cream, and the sliced chili pepper. Meanwhile, whisk the egg yolks and sugar until frothy. Once the milk and cream mixture has boiled and the chocolate has completely dissolved, strain it through a sieve. Bring back to a boil, remove from the heat, and add the egg mixture, stirring constantly. Continue stirring (in a double boiler or directly on the stovetop) and let it thicken until it reaches a sauce-like consistency. Remove from the heat and stir until lukewarm (this works best if you use a large pot of iced water and place a round mixing bowl inside). Then let it cool further and churn the mixture into an ice cream maker.
