Chocolate Lava Cookies

Ingredients for 1 servings:

  • 4 egg whites
  • 1 pinch of salt
  • 250 g sugar
  • 100 g desiccated coconut
  • 100 g chocolate shavings
  • 6 tbsp almond flakes
  • Powdered sugar, for dusting

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Protein utilization

Preheat oven to 150°C fan/convection oven. Line a baking tray with baking paper. Beat the egg whites with a pinch of salt until stiff peaks form. Gradually add the sugar while stirring, continuing to beat until dissolved. Fold in the desiccated coconut and half of the grated chocolate. Spread the batter onto the baking tray and bake in the preheated oven for 25 minutes. Remove the tray from the oven and immediately sprinkle the cookies with the remaining grated chocolate. Let cool slightly and cut into 5cm-long diamonds while still lukewarm. Cool on a wire rack and dust with powdered sugar.
