- 200 g marzipan – raw mass
- 115 g white chocolate

These little crunchy marzipan-filled cookies are just the thing for those with a sweet tooth. Preheat the oven to 190°C. Grease two large baking sheets. Beat the butter and sugar in a bowl until light and fluffy. Add the egg and beat again. Sift the flour and cocoa powder over the mixture. Stir first with a wooden spoon, then knead by hand until a soft dough forms. Roll out about half of the dough on a lightly floured surface to a thickness of 5 mm. Using a 5 cm diameter baking tin, cut out about 36 circles, kneading the scraps together and rolling them out again. Cut the marzipan mixture into about 36 equal pieces. Shape into balls, flatten slightly, and place one piece on each circle. Roll out the remaining dough and cut out the required number of circles. Place the second circle on top of the marzipan mixture, pressing the two pieces of dough together at the edges. Bake for 10–12 minutes, until the cookies have risen well. Allow to cool completely. Melt the white chocolate, cut into pieces, fill a paper piping bag, and decorate the cookies.
