- 3 tbsp, levelled cocoa powder

First, beat the egg whites until stiff. While you’re at it, preheat the oven to 130°C to 150°C. Carefully fold the following ingredients into the beaten egg whites: sugar, grated chocolate, and cocoa powder (please note: do not use instant powder!). Place small heaps (measure with a spoon) onto a baking sheet lined with baking paper. The smaller the better. Place in the preheated oven and bake for about 25 to 35 minutes. The highlight: The chocolate collects in the center during baking, creating a chocolate core, encased in a delicate meringue.
