Ingredients for 4 servings:
- 250 g dark chocolate
- 2 eggs
- 500 ml whipped cream
- 4 tbsp chocolate, chopped
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes
1. Chop the chocolate into small pieces. 2. Melt the chocolate pieces in a bowl over a hot water bath, stirring occasionally with a spatula. 3. Whisk the eggs in a bowl over a boiling water bath for 20-30 seconds until frothy. Stir the eggs constantly to prevent them from curdling. 4. Remove the egg foam from the water bath and stir in the melted chocolate. The mixture should be smooth. Allow to cool to room temperature. 5. Whip the cream until semi-stiff. Carefully fold the cream into the chocolate cream using a spatula until evenly combined. 6. Pour the finished chocolate mousse into the desired dish. 7. Cover the mousse and chill for at least 3 hours. 8. Scoop out dumplings with a tablespoon, arrange on a plate and serve sprinkled with chopped chocolate.
