Chocolate muesli cantuccini

Ingredients for 1 servings:

  • 200 g flour
  • 1 tsp baking powder
  • 60 g butter or margarine, soft
  • 80 g sugar
  • 125 g muesli (chocolate muesli)
  • 2 eggs, size M
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

makes about 40 cookies

Preheat the oven to 200°C (top/bottom heat) or 180°C (fan oven). Mix the flour and baking powder. Add all ingredients and knead using the dough hook of a hand mixer. If the dough is too sticky, add a little more flour. Divide the dough into 3 equal portions and shape them into approximately 30 cm long logs. Place the dough logs on a baking tray lined with baking paper and bake on the middle rack for about 15 minutes. Remove the logs from the baking tray using the baking paper and let them cool slightly. Do not turn off the oven. Then cut the logs diagonally into approximately 1.5 – 2 cm thick slices. Place the baking paper back on the baking tray and place the slices on top with the cut edge facing up. Bake on the middle rack for another 10 – 15 minutes, until the cantuccini are lightly browned. Let the cantuccini cool on a wire rack. Makes about 40 cantuccini.
