Chocolate oat cookies

Ingredients for 1 servings:

  • 200 g oat flakes, fine
  • 125 g wholemeal spelt flour
  • 125 g butter
  • 125 g raw cane sugar
  • 1 egg(s)
  • 1 tsp vanilla sugar
  • 5 tbsp milk or soy milk
  • 1 tbsp cocoa
  • 1 tsp baking powder
  • 100 g chocolate, roughly chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 29 minutes

First, mix the soft, room-temperature butter with the sugar, milk, and egg in a large bowl. Then add the remaining ingredients, except for the chocolate, and knead briefly using an electric dough hook. Finally, add the chocolate and mix it into the dough with a spoon. Then, using a teaspoon, drop portions onto a baking tray lined with baking paper. Shape the portions into rounds and then flatten them slightly. It’s important to leave some space between them, as they will rise slightly. Bake in a preheated oven at 180°C (convection oven) for about 12-14 minutes. After baking, let them cool on the baking tray. Once cooled, it’s best to store them in a tin; this way they will still taste good after 2 weeks.
