Makes about 35 cookies. Sift the flour and mix with the baking powder. Cream the butter with salt, sugar, and vanilla sugar until fluffy. Stir in the egg. Gradually add the flour. Finally, knead the oats and chocolate chips into the dough. Cover the finished cookie dough with cling film and let it rest in the refrigerator for half an hour. Use a teaspoon to pinch out small mounds of dough and place them on a baking sheet lined with baking paper, leaving at least 3 cm between each mound. Bake in a preheated oven at 175°C (gas mark 2, fan oven 160°C) for about 15-20 minutes until golden brown. Then let the cookies cool on a wire rack and store in a tightly sealed cookie tin.
