Chocolate pancakes

Ingredients for 4 servings:

  • 125 g flour
  • 6 tbsp brown sugar
  • 1 pinch of salt
  • 1 egg(s)
  • 1 egg yolk
  • 250 ml milk
  • 50 g butter
  • 1 tbsp orange liqueur or rum
  • 60 g sweets (chocolate chips), alternatively chocolate shavings
  • Powdered sugar for sprinkling
  • possibly cocoa powder

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Sift the flour into a bowl, add the sugar and salt, make a well in the center, add the egg and egg yolk, and mix with the flour. Stir in the milk. Melt half the butter and stir it into the batter. Add the orange liqueur or rum. Let the batter rest for 1 hour. Melt a little butter in a non-stick pan. Add a little batter and cook on each side until golden brown. Sprinkle chocolate chips/shavings on the pancakes. When the chocolate starts to melt, fold the pancakes into a quarter circle. Remove from the pan and keep warm. Bake 8 pancakes, sprinkle with powdered sugar, and serve. For an even more chocolatey texture, add 2-3 tablespoons of cocoa powder to the flour. Also delicious with cream. For children, omit the liqueur/rum.
