Ingredients for 2 servings:

  • 500 ml milk substitute (plant milk)
  • 80 g date(s), dried
  • 35 g cornstarch
  • 30 g cocoa powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

vegan and sugar-free

Place half of the plant-based milk, along with the dates, cornstarch, and cocoa powder, into a high-speed blender and blend until well combined. Bring the other half of the milk to a boil and add the mixture while stirring. Cook the mixture until the pudding has visibly thickened. Ladle the pudding into bowls and let it cool. If desired, garnish the dessert with fruit such as raspberries or bananas, or even chopped hazelnuts. For a very fine pudding without small date pieces, soak the dates in the milk for 15 minutes beforehand, blend them with the cornstarch and cocoa powder, and then pass the mixture through a fine-mesh sieve.
