Chocolate soufflé

Ingredients for 4 servings:

  • 100 g couverture or dark chocolate
  • 100 g butter (sweet cream butter) and some butter for greasing the molds
  • 50 g flour
  • ½ tsp cinnamon
  • 100 g sugar
  • 3 eggs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 170°C (350°F) top and bottom heat (no fan). Butter 4 soufflé dishes and sprinkle with sugar. Roughly chop the chocolate and melt it with the sweet cream butter in a bain-marie. Add the flour, cinnamon, sugar, and eggs, remove from the heat, and stir until the sugar has dissolved. Divide the chocolate mixture among the prepared dishes and bake on the middle rack of the oven for about 15-20 minutes. Serve hot to keep the soufflés’ interiors soft and runny.
