Pork fillet with porcini mushroom sauce

Ingredients for 3 servings:

  • 25 g porcini mushrooms, dried
  • 150 g whipped cream
  • 1 onion(s)
  • 30 g bacon, streaky
  • 1 tbsp oil
  • 1 pork fillet(s)
  • Salt and pepper, freshly ground
  • 1 tbsp brandy (may omit)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pour the cream over the mushrooms and let stand for ten minutes. Dice the peeled onion and bacon. Fry the bacon slowly over medium heat. Add the diced onion and fry until translucent. Remove from the pan and set aside. Add oil to the frying fat. Fry the pork fillet over medium heat for 15 minutes on all sides. Lightly season with salt and pepper. Add the bacon, onion, and cream with the mushrooms. Braise in the covered pan for five minutes. Add the brandy and season the sauce with salt and pepper.
