Chocolate-vanilla coffee pudding

Ingredients for 2 servings:

  • 4 tbsp cornstarch
  • 100 ml espresso, strong
  • 400 ml soy milk (soy drink) with vanilla flavor
  • 8 tbsp cocoa powder
  • 3 tbsp sugar
  • 1 tsp vanilla sugar
  • 1 pinch of salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Blend the cornstarch with the espresso until smooth. Bring the soy milk to a boil in a saucepan with the cocoa powder, both sugars, and a pinch of salt. Stir frequently with a whisk to prevent the milk from burning. Remove the pan from the heat and stir in the prepared espresso mixture. Return the pan to the warm stovetop and simmer the pudding for about another minute while stirring. Let it cool and refrigerate until ready to serve.
