Chocolate Whoopie Pies with a quark-vanilla-lemon filling

Ingredients for 1 servings:

  • 190 g flour
  • 2 m.-sized eggs
  • ¼ cup milk
  • 60 g cocoa powder
  • 70 g powdered sugar
  • ¼ tsp baking powder
  • ¾ tsp baking soda
  • 115 g butter
  • ½ tsp vanilla extract
  • 750 g low-fat curd cheese
  • 1 shot of mineral water
  • some lemon juice
  • 3 tsp vanilla pudding powder

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

First mix the wet ingredients together, then add the dry ingredients. The batter should be fairly thick. Put a teaspoon of each into the baking pan. If you don’t have a baking pan or are experienced, you can also pipe the whoopies onto a baking sheet using a piping bag. With these variations, it is essential to leave enough space between the whoopies, as they will spread apart. Bake at 180 degrees (top and bottom heat) for approx. 15 minutes. Then carefully remove the whoopies from the pan/baking tray and set aside to cool. Continue with the remaining whoopies. You should have approx. 4 baking trays of 24 whoopies each. The amount/portioning may vary depending on the size and amount of batter. Mix the ingredients for the filling and mix with a mixer until creamy. Now spoon the filling onto one side of the whoopie (using a knife or piping bag), then place a second one on top. Press down lightly. Store in a cool place.
