Ingredients for 2 servings:
- 4 egg yolks
- 50 g sugar
- 50 g dark chocolate
- 125 ml Marsala
- Cocoa powder, for dusting
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
In a large bowl, beat the egg yolks and sugar with an electric mixer until very fluffy. Grate the chocolate and fold it into the egg foam. Stir in the Marsala wine. Place the bowl over a pan of gently simmering water and whisk on low heat or with a whisk until the mixture thickens. Do not allow it to boil, or it will curdle. Ladle the hot zabaglione into warmed dessert bowls and dust with cocoa powder. Serve immediately.
