Chop chocolate yourself: 5 practical recommendations
You have the most control over the results of chopping a couverture or a bar of chocolate when you do it yourself rather than letting a machine do the work. It’s also a good idea to refrigerate or freeze the chocolate before chopping it so it doesn’t melt during processing.
- Chopper: Normally used primarily for herbs, a large chopper is also useful for chopping chocolate into fine pieces. Since the knife is double-edged, it can be rocked and two handles are attached to the blade, handling is easy and the chocolate shavings are made quickly.
- Large kitchen knife: You can achieve the same effect, albeit with a little more effort, with a heavy and sharp kitchen knife that should be at least as wide as the bar or block of chocolate itself. - Serrated knife: You have less control with a serrated knife. Note that when using such a knife you are more likely to achieve chocolate dust or very fine pieces. - Large grater/slicer: If you use a square grater or a vegetable slicer, you can manipulate the size and shape of the chocolate a little more easily. For this purpose, the couverture should be cold or frozen, as the friction on the metal can melt the chocolate.
- Meat mallet/rolling pin: It will be a bit coarser and more uneven if you smash the chocolate with a rolling pin or a meat mallet. So that the chocolate shavings don’t fly through the kitchen, simply pack them in a freezer bag.

- Food Processor: With the right blade attachment, a food processor can even process chocolate and chop it into even pieces. To ensure that the device is not overwhelmed, it can help to break the board or block into smaller pieces beforehand.
- Thermomix: If you have a mixing bowl at home, you can also use this for chopping. At level 8, let the Thermomix do the work for a few seconds. Use level 7 for coarser rasps.
