Chow Mein with Chicken

Ingredients for 6 servings:

  • 1 onion(s), red
  • 1 bell pepper(s), red
  • 2 spring onions
  • 2 garlic cloves
  • 700 g chicken
  • 1 tbsp, heaped paprika powder
  • ½ tbsp, heaped pepper
  • ½ tbsp, heaped garlic powder
  • 100 ml soy sauce
  • 1 tbsp sesame oil
  • 10 ml rice vinegar
  • 400 g egg noodles or wheat noodles
  • 1 handful of bean sprouts
  • e.g. sesame, optional

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the onions into half rings. Slice the bell pepper into strips. Slice the spring onions into strips of any length (1-3 cm). Peel and mince the garlic. Cut the chicken into small strips. Mix the strips with paprika, pepper, garlic powder, sesame oil, and half of the soy sauce in a bowl until the chicken strips are all browned and have taken on the color of the soy sauce. Sear the chicken in a large pan, then continue to cook over medium heat for 6-8 minutes. The chicken strips should have a golden brown color with a crust. Set the meat aside in a small bowl. Gently fry the onion, bell pepper, and spring onions in the previously used pan for 5 minutes; be careful not to burn them! In a saucepan, cook the noodles until al dente. Meanwhile, add the garlic, rice vinegar, and the remaining soy sauce to the pan and stir briefly. Add the meat and bean sprouts. Drain the cooked noodles thoroughly and add them to the pan with the vegetables. Stir everything until the noodles take on the color of the soy sauce—but don’t stir too long, or the noodles will become too soft. Garnish with sesame seeds, if desired.
