Chrissi's basic recipe for glass cake

Ingredients for 4 servings:

  • 100 g butter (half-fat butter)
  • 100 g sugar
  • 3 eggs, size M
  • 150 g yogurt 1.5%
  • 1 dashes lemon juice
  • 150 g flour
  • 75 g cornstarch
  • 1 tsp baking powder
  • 1 pinch of salt

Working time approx. 25 minutes; Total time approx. 25 minutes

Beat the softened fat with the sugar thoroughly. Then gradually add the eggs one at a time and mix in. Now beat the mixture with a whisk until it is very creamy. Mix in the yogurt and the splash of lemon juice. In a separate bowl, mix the flour with the cornstarch, baking powder, and salt using a whisk (this saves me the hassle of sifting!) and then carefully stir it into the beaten mixture. Only stir as much as necessary to ensure the cake is nice and light. Pour the batter into the prepared (jar) glasses that have been sprayed with baking spray and sprinkled with breadcrumbs. Only fill the glasses halfway, as the batter will rise quite a bit. Before putting the glasses in the oven, wipe the rims again with a clean cloth. Bake at 175°C for about 35 minutes. Do the skewer test! Total 38 points / 9.5 points for 4 glasses of 440ml each. This basic version can be modified in many different ways. For example, you could add a little rum instead of lemon juice, or chopped nuts or raisins, or chopped apples, or other fruits or dried fruits. Replace some of the sugar with a packet of bourbon vanilla sugar, or add cappuccino powder, or add various spices such as cardamom, ginger, gingerbread spice, etc., or add cocoa powder or chocolate chips, and so on. Depending on what you add, the number of points awarded will increase accordingly. However, by adding chopped apples, for example, you could definitely bake 6 glasses instead of 4.
