Ingredients for 1 servings:

  • 4 eggs
  • 120 g sugar or honey
  • 5 tbsp water, hot
  • 1 packet of vanilla sugar
  • Tonka bean abrasion
  • 200 g wholemeal spelt flour
  • 1 packet of baking powder
  • Fat for the mold
  • Breadcrumbs for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Beat the first 5 ingredients for 4 minutes until fluffy. Mix the remaining ingredients and fold in lightly, but do not overbeat. Pour into a 30cm fruit cake tin that has been greased and dusted with breadcrumbs. Bake in a cold oven at 190°C for 20-25 minutes. For a 28cm tin, I used 3 eggs, 4 tablespoons of hot water, 100g sugar, and 150g wholemeal spelt flour. You can also substitute the flour type.
