Ingredients for 1 servings:
- 6 egg yolks
- 120 g sugar
- 5 tbsp water, boiling
- 1 packet of vanilla sugar
- 1 pinch of salt
- 6 egg whites (beat with 50 g sugar until stiff)
- 150 g flour
- 50 g cornstarch
- possibly cocoa powder

Whisk the egg yolks, water, and half of the sugar with the vanilla sugar until frothy. Beat the egg whites until stiff peaks form, slowly adding the remaining sugar. Pour the beaten egg whites into a dome-shaped bowl onto the egg yolk mixture and fold in very carefully. Sift the flour, cornstarch, and baking powder over the mixture and fold in. If you want a chocolate base, fold in 1 heaped tablespoon of cocoa powder. Do not open the oven for the first 15 minutes, as the batter could collapse slightly. 200°C (plus 25-30 minutes baking time), do the toothpick test.
