Ingredients for 1 servings:
- 100 g butter or margarine
- 150 g flour
- 120 g sugar
- ½ packet of vanilla sugar
- 1 tsp baking powder
- 3 dashes of rum flavoring
- 2 eggs
- possibly powdered sugar for dusting
- 4 tbsp cocoa powder if needed
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
enough for approx. 12 pieces
Beat the eggs and sugar with a whisk until fluffy. Fold in the butter (it’s best if it’s slightly runny). Add the flour, vanilla sugar, baking powder, and rum flavoring and whisk again until a smooth batter forms. If you’re making chocolate muffins, fold in the cocoa powder. Either grease a muffin tin or line each cup with paper baking cups. Spoon about 1 1/2 tablespoons of batter into each cup. Bake in a preheated oven at 200°C (fan oven) for about 13 minutes. Let the muffins cool.
