Christmas Blueberry Cake
The perfect christmas blueberry cake recipe with a picture and simple step-by-step instructions.
- 6 Pc. Eggs
- 2 packet Vanilla sugar
- 250 gr Powdered sugar
- 65 ml. Oil
- 125 ml. Advocaat
- 250 gr Flour
- 1 packet Baking powder
- 1 Glass Blueberry jam
- 1 Glass Blueberries thickened with 4 sheets of gelatine
- 4 cups Cream
- 4 Tablespoon Lemon curd
- 2 cups Cream to decorate
- Beat whole eggs until foamy, with 2 tablespoons. Water, then mix in the sugar + vanilla sugar. Beat everything for 15 minutes. Then add the oil and eggnog and mix in the flour and baking powder.
- Put the dough in a 28 cm dish and bake at 170 degrees for 50 minutes. Cool the base and cut through 3 times. Put a base on a cake plate, put a ring around it. Brush the bottom with blueberry jam.
- 4 Whip a beaker of cream with 4 cream stiffeners, stir in the lemon curd. Spread 1 quarter on the bottom floor. 2. Lay on the base, cover with 1 third of blueberries and spread the 2nd quarter of cream on top. Lay on the 3rd base and cover with blueberries and cream again.
- Likewise, spread the fourth base with the rest of the cream. Put in the fridge overnight. The next day, decorate all around with cream, place the Christmas motif in the middle.
