Christmas Blueberry Cake

The perfect christmas blueberry cake recipe with a picture and simple step-by-step instructions.

  • 6 Pc. Eggs
  • 2 packet Vanilla sugar
  • 250 gr Powdered sugar
  • 65 ml. Oil
  • 125 ml. Advocaat
  • 250 gr Flour
  • 1 packet Baking powder
  • 1 Glass Blueberry jam
  • 1 Glass Blueberries thickened with 4 sheets of gelatine
  • 4 cups Cream
  • 4 Tablespoon Lemon curd
  • 2 cups Cream to decorate
  1. Beat whole eggs until foamy, with 2 tablespoons. Water, then mix in the sugar + vanilla sugar. Beat everything for 15 minutes. Then add the oil and eggnog and mix in the flour and baking powder.
  2. Put the dough in a 28 cm dish and bake at 170 degrees for 50 minutes. Cool the base and cut through 3 times. Put a base on a cake plate, put a ring around it. Brush the bottom with blueberry jam.
  3. 4 Whip a beaker of cream with 4 cream stiffeners, stir in the lemon curd. Spread 1 quarter on the bottom floor. 2. Lay on the base, cover with 1 third of blueberries and spread the 2nd quarter of cream on top. Lay on the 3rd base and cover with blueberries and cream again.
  4. Likewise, spread the fourth base with the rest of the cream. Put in the fridge overnight. The next day, decorate all around with cream, place the Christmas motif in the middle.
