Ingredients for 4 servings:

  • 4 rolls (Altbier rolls)
  • 2 onions
  • 4 eggs
  • 8 slices of breakfast bacon
  • 4 tbsp oil (peanut oil)
  • 4 tbsp sauce (hamburger sauce) or remoulade
  • 2 chili peppers
  • 2 tbsp mustard (paprika-garlic mustard)
  • 4 tbsp cheese (Gouda), grated
  • 400 g bratwurst, coarse, raw
  • 1 tbsp soy sauce
  • some coriander leaves, shredded
  • 1 tsp sweet paprika powder
  • 1 tsp sea salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat a non-stick pan with 2 tablespoons of peanut oil and 1 tablespoon of soy sauce. Crack 4 eggs into the pan over medium heat and add them. Using a spatula, evenly distribute the egg yolks and whites with the coriander, then fry the egg briefly on both sides and keep warm. Remove the skins from the sausages. Fry the minced meat in a steel pan over high heat until crispy and season with salt. Keep warm. Fry the bacon in a non-stick pan until crispy and keep warm. Slice the onions and fry in the bacon fat until golden brown. Sprinkle the sautéed onions with sweet paprika and sea salt. Core the chili peppers and finely dice. Halve the buns and hollow out the bottom and lid. Use the crumbs for something else. Fill the bottom half with the fried minced meat. Spoon the hamburger sauce on top. Place a slice of fried egg on top and sprinkle with a portion of the finely diced chili peppers. Now spread the mustard on the egg. Place a portion of onion on top. Drape two slices of bacon on top. Sprinkle with cheese, put the lid on, and bake in the oven at about 200 degrees Celsius for 5 minutes. Always eat warm!
