Christmas Cookies: Cardamom Balls

  • 30 g Tigernuts, ground
  • 170 g Soft butter
  • 1 pinch Salt
  • 1 Pc. Organic lemon
  • 1 tsp Tartar baking powder
  • 1 Pc. Egg yolk
  • 1 tsp Cardamom
  • 1 Msp Vanilla
  • 120 g Raw cane sugar
  • 1 Pc. Protein
  • Walnuts, hazelnuts
  1. Finely grate the peel of the lemon and then cut the lemon in half and squeeze out the juice (we need about 3 tablespoons of the juice). Knead both with the rest of the dough ingredients to form a smooth dough. Cover and chill for about 30 minutes.
  2. Remove small walnut-sized portions from the dough and shape into round balls. Place them next to each other on a baking sheet lined with baking paper and brush with the egg white. Place any nut in the middle and press lightly.
  3. Bake the biscuits in the preheated oven at 190 degrees top / bottom heat on the middle rack for about 12-14 minutes. Make sure that the cookies don’t get too dark.
