Christmas Cookies: Cardamom Balls

Also:
- 30 g Tigernuts, ground
- 170 g Soft butter
- 1 pinch Salt
- 1 Pc. Organic lemon
- 1 tsp Tartar baking powder
- 1 Pc. Egg yolk
- 1 tsp Cardamom
- 1 Msp Vanilla
- 120 g Raw cane sugar
- 1 Pc. Protein
- Walnuts, hazelnuts
- Finely grate the peel of the lemon and then cut the lemon in half and squeeze out the juice (we need about 3 tablespoons of the juice). Knead both with the rest of the dough ingredients to form a smooth dough. Cover and chill for about 30 minutes.
- Remove small walnut-sized portions from the dough and shape into round balls. Place them next to each other on a baking sheet lined with baking paper and brush with the egg white. Place any nut in the middle and press lightly.
- Bake the biscuits in the preheated oven at 190 degrees top / bottom heat on the middle rack for about 12-14 minutes. Make sure that the cookies don’t get too dark.
