Ingredients for 4 servings:

  • 300 g spelt flour
  • 100 g almonds, ground
  • 100 g hazelnuts, ground
  • 100 g coconut oil
  • 5 tbsp cocoa powder
  • 1 tsp baking powder
  • 3 tsp gingerbread spice or similar
  • 240 g dates
  • 200 ml water, hot

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Pour hot water over the dates and let them soak for half an hour. Meanwhile, melt the coconut oil in a saucepan and then let them cool slightly. After the soaking time, puree the dates with the water. Mix the dry ingredients together and then add the date puree and melted coconut oil. Knead everything into a dough. Now roll out the dough, not too thickly, and cut out cookies. Bake at 170°C (top/bottom heat) for 15-20 minutes. Let cool before serving.
