- 1 liter elderberry juice (straight juice)
- ½ liter of water
- 2 star anise
- 1 cinnamon stick(s)
- 1 vanilla pod(s)
- 1 kg gelling sugar 2:1

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 25 minutes

Combine elderberry juice, water, and spices in a saucepan and bring to a boil briefly. Let stand for about 1 hour to allow the spices to develop their aromas. Then, while stirring, drizzle in the gelling sugar. Cook according to the gelling sugar package instructions and pour into prepared jars. Decorated accordingly, this makes a delicious and lovely gift for the family.
