Ingredients for 1 servings:
- 400 g butter
- 400 g sugar
- 6 eggs
- 2 tsp ground cinnamon
- 1 tsp clove(s), ground
- ½ tsp cardamom, ground. (approx. 3g)
- 375 g flour
- 125 g starch flour
- 10 g potash (baking agent, potassium carbonate)
- 275 g raisins
- 125 g currants
- 200 g almonds, chopped, possibly unpeeled
- 100 g candied lemon
- e.g. cake icing, ready-made or homemade lemon glaze
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
Separately, beat the eggs until very fluffy. Beat the butter until fluffy, add the sugar, then beat in the fluffy eggs. Combine the flour, cornstarch, potash, and spices (sift if necessary) and stir in. Stir the almonds, raisins, currants, and candied lemon peel into the batter and spread it on a greased and floured baking sheet. Bake at low heat (approx. 180°C) for approx. 45 minutes. Once cooled, brush with lemon glaze and decorate with nuts or sprinkles, then cut into even diamond shapes.
